This wine is a unique, complex and local in an extraordinary way. It is made exclusively from Niagara grapes, fermented by ‘wild’ yeasts indigenous to our vineyard, and matured in barrels made from nearby oak trees. This dry wine has Granny Smith apple and pear nuances and tremendous minerality and freshness to balance the butter and vanilla flavours. It pairs well with medium cheeses, roast poultry but is also delicious on its own.
